About Nicholas & Carolina

Cole & Carolina met Junior year at EIU while they were helping some mutual friends move into their apartment. This consisted of mostly the guys moving things while the girls were supervising. Carolina saw this cute guy singing along to some country tunes and wanted to know more about Cole.

One day Carolina decided it was time to make the move and text Cole, she enlisted the help of some trusted friends to come up with the perfect text to send to Cole and make her move. Some of the early drafts included "What's shakin' bacon." and "What's cookin' good lookin'' (thanks to Sierra & Boyd ;) ). She then opted to stick with the classic "Hey Cole, it's Carol! What are you up to on Thursday? Would you like to hang out?" He was free on Thursday, so they decided to hang out and watch movies. They watched a couple of movies on Carolina's box TV. They got to talking about anything and everything and before they knew it, they had talked until 3am. Fast forward two weeks later after getting to know each other, Carolina knew she found her southern gentlemen.

Throughout the last 7 years, Carolina and Cole have enjoyed traveling together, some of their favorite trips entailed hiking in Glacier Ntl. Park, Cape Cod, Gloucester, Hilton Head, Outer Banks, Tennessee, and visiting Cole when he lived in Texas for his internship. In their spare time they love to try new foods, enjoying all the outdoor activities, spending time with friends and family, and loving on their Aussiedoodle, Cassie.

In the summer of 2023, they planned a trip out to the east coast to Charleston, SC as well as to the Outer Banks for some much-needed R & R with their favorite travel companions, Annie & Logan. This is where Cole proposed- in SC on the beautiful wrap around porch at our Air B & B. It was the most special, intimate moment and Carolina couldn't have asked for anything more!
